Recipe Description:

Baba Ganoush means ‘pampered daddy’, which frankly raises more questions than it answers— not that people haven’t tried to solve this particular riddle. Some say this lucky father was a sultan, used to having rich & luxurious food cooked for him; others speculate that a toothless father’s doting daughter came up with this soft and silky dish. Whatever the reason, the result speaks for itself. Softening and smoking the aubergine inside a parcel of its own charred skin is a devilishly delicious technique, while layering tender, fragrant lamb and tomato sauce on top makes for a feast worthy of the dish.
