Recipe Description:

They may be iconic, but flame-grilled kebabs and clay oven lavash breads are usually left to those with specialist equipment, while Persian home cooks focus more on everyday dishes like khoresh (stew), with green beans a popular main ingredient. Vegetarians beware, though; you’ll often find small amounts of meat in khoresh, used to enhance the savouriness of the simmering vegetables. Chicken stock is our way of achieving that result, while the spice mix (advieh) coating our chicken flavours its natural juices, which are then poured over the whole dish— the disparate elements cohering around a flavourful centerpiece.
