Recipe Description:

Mafé is a deeply comforting, rich tomato & peanut stew. Peanuts are Senegal’s primary crop; once brought over from South America, they soon eclipsed the region’s native ‘Bambara groundnut’ as a national staple food. The Bambara groundnut is now a rare and somewhat neglected crop, but its memory lives on in this traditional favourite, popular all over West Africa and further afield. Sometimes featuring chicken or fish, we’ve gone for the beef mafé that is often cooked for special occasions in Senegal, the deep nuttiness of the sauce not proving too overpowering for the beef’s assertively meaty flavour.
