Umami has three types: glutamates (from plant-based ingredients like onions and soy sauce), inosinates (animals), and guanylates (dried mushrooms). Combining different umami types multiplies the effect, which is why, from the dashi’s combination of glutamate-rich kombu (glutamate-rich seaweed) with inosinate-filled bonito (smoked fish), down to the beef and shiitake, this is a mind-blowingly savoury broth that lingers pleasantly on the palate.
