Recipe Description:

Aside from the obvious melt-in-your-mouth braised beef, chee hou sauce is the star of this dish. Somewhere between oyster sauce and hoisin, chee hou is a fermented soybean base with a well rounded, very fragrant, sweet savoury profile. Ideal for braising rich and complex meats like beef. In this classic Singapore-Chinese recipe, the beef is red cooked (Hong Shao), a classic Chinese braising technique using soy sauce, rice wine and sugar to slowly tenderise the meat. Watch as the soy sauce slowly thickens and the sugar caramelises, imparting a rich, reddish brown colour.
