What does a taco need to contain? Something savoury in the middle, rich meat or fresh seafood, cooked in a flavourful marinade. Fresh herbs, an aroma that can steam out at every bite. Something slightly sour and creamy, a yoghurt or relish, perhaps. Citrus and chilli, of course. And bright, juicy vegetables to crunch down on with every bite. Inspired by Mumbai street food, we’ve assembled a kind of kati roll/taco mash-up, our very own Indiaco, delivering all of the vibrant, piquant, spicy and lip-smacking flavours that Indian and Mexican wraps have in common.
