Recipe Description:

Admittedly ‘shawarma’ usually conjures images of thin slices of meat shaved from a cone-shaped vertical rotisserie— but we’ve found that horizontal grilling works just as well, whether on a barbecue or in the oven, and many chefs all over the Middle East prefer this approach. Shawarma probably originated in Turkey, where the word "çevirme” refers to the turning of the grill, but we love the fragrant spice marinade and garlicky sauce of the Levantine version.
