Donburi refers to a meal of rice served in a bowl together with a topping of prepared ingredients. Originating as a quick, convenient way to serve Japanese workers in the 19th century, donburi caught on nationwide, and now many of Japan’s most iconic dishes, from sushi to tempura, can be found as -don toppings. This ‘Chuka-don’ (‘Chinese-style donburi’) features ingredients that are common to the cuisines of China and Japan (like shiitake and pak choi) in a rich and nourishing soy sauce-based chicken broth. It’s a medley of elegant, refined flavours, yet not too proud to allow hungry eaters to devour it as quickly as possible
