Recipe Description: 

Chicken Tinga, or Tinga de Pollo, is a traditional Mexican dish that originates from the state of Puebla, home to the battle of Cinco de Mayo, and also considered a Mecca of the many delicious Mexican classics we know and love. During the colonial period, cooks in Puebla invented tinga, a true marriage between Spain and Mexico, using a mixture of Mexican foods with a European cooking method. Chicken Tinga is essentially a stew made with shredded chicken in a sauce of tomatoes, chipotle chiles in adobo, and onions. It’s great no matter what you put with it, but to make things extra fun, we decided to put our Chicken Tinga in tacos, garnished with red onions, avocado, coriander, feta and lots of lime!
