Domoda is the national dish of Gambia and a crowd favourite among tourists who chose to holiday in the restorative winter sun. The peanut or groundnut was first introduced in the 16th century by Portuguese traders from the Americas, and from that humble beginning the peanut (now a major crop within the country) is the driving flavour of their national food institution. The stewing sauce consisting of peanuts, onions, garlic, tomatoes and scotch bonnet peppers lends a rich and creamy backdrop to this simple, hearty Gambian chicken and sweet potato stew.
