As a much loved Caribbean favourite, jerk is one of the enduring legacies of the fusion of African and Taino cultures in Jamaica. ‘Jerk’ is thought to have been conceived when the Maroons introduced African cooking techniques to Jamaica which were used alongside native Jamaican ingredients and seasonings used by the Arawak Indians.
