There are at least as many versions of channa masala as there are Indian cooks in the world, its adaptability to all dietary preferences and requirements making it perhaps the most essential dish in all Indian cuisine. The challenge is not to take this modest, everyday favourite for granted, keeping it special without compromising its hearty simplicity. Enter the tomato-complementing sugariness of sweet potato and the unique nuttiness of kala channa (‘black chickpea’), a smaller, more flavourful variety with a distinctive ebony-mahogany hue.
