Enter kofta bi tahini, a creamy casserole of fragrant mince drenched in magical lemon-tahini yoghurt, topped with sliced potatoes that crisp up in the oven. The top layer of tahini sauce thickens and becomes extra-creamy, merging with the golden-brown potatoes— to call it a hybrid Middle Eastern shepherd’s pie and dauphinoise would be barely scratching the surface.
