Recipe Description:

Traditional Korean cuisine is so full of tasty vegetable dishes, and so easily adapted for vegetarians, that it’s rare to find more modern Korean cooking, like Korean fried chicken, adapted for those on a plant-based diet. Which is a pity, because tofu is the perfect companion for the red yangnyeom (‘seasoning’) glaze that popularly covers the country’s iconic fried chicken— unlike chicken, tofu only needs a quick pan-frying to develop a flavoursome golden crust, and its tender, refreshing insides are a great contrast to the sticky, spicy coating.
