Recipe Description:

In Korea, samgyeopsal (thinly sliced pork belly) is often cooked on a portable griddle at the table, encouraging everyone to get involved in the cooking while giving tireless home cooks (that’s you!) a much needed rest. Still, even without that specialist equipment, these pork sangchu ssam (lettuce wraps) involve everyone in a shared ritual, each person assembling and curating their every bite at the table. It’s considered polite to only load each ssam with enough rice, pork and veg to eat it in one single bite. Taking a big, hamster cheeks-sized mouthful is an acceptable way around this limitation, but please be careful not to overdo it...
