Recipe Description:

Biryani is a supercharged Indian twist on Persian pilaf, with rice, meat and a heady mix of spices and herbs all cooked together in a single pot until meltingly tender and fragrant. There’s thousands of biryani variations from all over South Asia, but for lamb biryani we love the tantalising grandeur of our saffron-infused Pakistani-style recipe, served traditionally with refreshing cucumber raita. First the lamb is seared in a tarka of whole spices, then the onions and aromatics soften in preparation for the real magic— fragrant rice, meat and spices slowly stewing together, becoming infinitely more than the sum of their parts.
