Designed to heighten all of your senses, bun chay is a cold noodle salad made with slippery vermicelli noodles, crunchy raw vegetables, crispy fried onions, fiery red chillies and a nuoc cham dressing jam-packed with sweet, sour and salty flavours. A satisfyingly versatile dish, our vegan version uses pan fried, perfectly charred tofu. You’ll often find this dish served with other proteins too, like minced pork. Mix everything together at the end to experience those beautifully balanced flavours melt away in your mouth.
