When Chinese immigrants opened restaurants in Lima, Peru, they did so partly to provide sanctuary in the face of local hostility to their presence. But something unprecedented happened. The locals of Lima, rich and poor, not only enjoyed the food, but embraced it wholly. There are now over 6000 chifa (Chinese-Peruvian) restaurants in Lima, from grand palaces to humble diners, and Peruvian cooking owes a lot to 100 years of chifa innovation. Its most treasured recipe is lomo saltado, scorchingly stir-fried beef strips in a gravy of fruity Peruvian aji amarillo (yellow chillies), tomatoes, herbs & soy sauce, served with chips
