There are now over 6000 chifa (Chinese-Peruvian) restaurants in Lima, from grand palaces to humble diners, and Peruvian cooking owes a lot to 100 years of chifa innovation. Its most treasured recipe is lomo saltado, scorchingly stir-fried beef strips in a gravy of fruity Peruvian aji amarillo (yellow chillies), tomatoes, herbs & soy sauce, served with chips
