Recipe Description:

Lotus roots or kamal kakri are a common delicacy in Asia. In northern India, they are usually cooked in a curry sauce or like a Sookhi Bhaji. Some innovative cooks have even taken to stuffing the lotus root canals with vegetables, meat or spices and then roasting them whole, in the oven. They’re a highly versatile ingredient, as they can be used in curries, or shredded and transformed into Vegetable Koftas. For our recipe, we’ve opted for a rich garam masala and passata based sauce, bursting with ginger and garlic to encase the lotus roots. This recipe delivers huge flavor from some very simple ingredients.
