Admittedly ‘shawarma’ usually refers to thin slices of meat shaved from a cone-shaped vertical rotisserie— but this spiced and roasted cauliflower, with its aromatic, charred outside and deep, savoury centre, deserves the comparison. To bolster this tribute to Levantine cuisine, we’ve paired it with another Middle Eastern icon. Mujadara means ‘pockmarked’, named after the lentils dotted among the rice. The caramelised onions make an irresistible garnish for this moreish rice dish.
