A sack of these ‘pelmeni’ (meaning ‘ear bread’ due to their shape), ready to be boiled by the handful, is an essential piece of kit for long expeditions through the cold taiga. The thin dough wrapper is a tasty way to keep the flavourful filling safe. Despite their intrepid origins, pelmeni are now enjoyed in home kitchens all over Russia, often with a dollop of sour cream and some chopped fresh herbs.
