So much famous Mexican culture springs from the state of Jalisco that the state motto is “Jalisco es México”— we have Jalisco to thank for everything from mariachi music to sombreros and tequila, as well as this pozole rojo, a pork and corn-based soup blushing with the spicy red chilli that is so dear to Jaliscan cuisine. Pozole has been made in Jalisco since before Columbus came to America, when it was a somewhat sacred dish. These days it’s still brought out for celebrations, including on New Year’s Eve, but its tantalising, full-bodied flavour and bright garnishes can be enjoyed at any time.
