The word okonomi in Japanese means “what you like” and the word yaki means to grill or cook - altogether meaning “what you like, grilled’. There are two definite styles of this cabbage and flour-based pancake; Osakans mix their toppings into the batter where Hiroshimans grill their pancake first before layering on their toppings. What they both have in common though, is that both douse their creations in the signature okonomiyaki brown sauce. If you ever make it to either place, someone will ask you “which style do you prefer’. This answer can be quite political, and of course, depending on which city you're in, there’s only one right answer!
