Of the Indonesian islands, perhaps Sulawesi doesn’t hold as romantic a place in the Western imagination as Java, Bali, Borneo or Sumatra. As a culinary destination, it’s also somewhat underrated, but that’s about to change, partly thanks to the peaceful coastal city of Manado on the north of the island. Known for generous seasoning and especially hot sauces, Manado cuisine has many hidden gems. One of our favourites is rica-rica, a pounded spice paste usually found coating the best cuts of meat— tender, juicy and rich duck breast is the perfect pairing for its spicy yet beguilingly deep flavour.
