A karahi has deep sides and is used for simmering stews and shallow frying ingredients, and can be flipped upside down to fry roti bread on its base. In this recipe chicken thighs are cooked in a masala sauce with spices, onions and tomatoes, and served with quick pickled cucumber to cut through the rich curry.
