A karahi has deep sides and is used for simmering stews and shallow frying ingredients, and can be flipped upside down to fry roti bread on its base. You don't need to have a special pan to make this dish at home - a saucepan will do just fine. In this recipe chicken thighs are cooked in a masala sauce with spices, onions and tomatoes, and served with quick pickled cucumber to cut through the rich curry.
