Chaat isn’t so much a type of food as a whole life philosophy built on snacking well. From a Hindi word meaning ‘lick’, chaat is any savoury street food that boasts a particular quartet of lip-smacking flavours: sweet, sour, spicy and salty. It’s Indian food unleashed, a vibrant medley of elements competing for your tastebuds’ attention. You might think it’s unnecessary to form perfect samosa triangles only to break them up, slather them in chutneys, yoghurt and crunchy sev, and then serve on a bed of chickpeas— but when it comes to chaat, unnecessary means delicious, and going too far means you’re halfway there.
