Recipe Description:

Slurpable and bouncy, udon are a joy to wrestle with as they wriggle around your chopsticks, whether seasoned by a soup broth, salad dressing or stir fried sauce. Although commonly associated with Japan, the earliest iteration of udon noodles originated in China and was introduced to Japan during the Tang dynasty. Today, udon is a beloved comfort food sold in almost every restaurant. For this recipe we wanted to create a Korean fusion featuring shiitake mushrooms and the power trio of kimchi, gochujang and gochujaru flakes, which produces an umami ballad so beautiful you’ll want to make it over and over again!
