Recipe Description:

Japanese food has a reputation for being delicate & understated, but such sophisticated delights won’t necessarily see you through the winter or fill your belly after a day’s skiing in the mountains near Joetsu. That’s where bowlfuls of thicker, heartier soup come in handy, perhaps infused with a sturdier than average miso paste that will stand up to the strong meaty flavours. Joetsu city’s famous tonjiru (pork miso soup) is one such dish, but we’ve been further inspired by the unusual spiciness of Japanese miso ramen, an unconventional formula that often features Chinese-style chilli bean paste to add that extra kick.
