Although the word ‘filo’ is Greek, this impressively thin dough originated as ‘yufka’ in palatial kitchens all over the Ottoman Empire, probably the result of talented pastry chefs competing to stretch out their doughs to ever more delicate, flaky thinness. All over Turkey and the Balkans, Börek is the name for all (mostly savoury) filo pies and tarts, still baked by competitive local artisan bakers and sold as a convenient grab-and-go meal. Made in a variety of shapes and sizes, we love the entrancing spiral of the Turkish ‘kol böreği’ (‘arm börek’).
