Recipe Description:

These roasted peppers are stuffed with orzo, a tiny rice shaped pasta whose name means “barley” in Italian, as a reference to its grain-like appearance. Orzo is often used as a substitute for rice as it shares its ability to soak in flavour, but retains more of a bite when cooked. Here you’ll pack your orzo with spinach, onions, tomato and lemon before stuffing into juicy red peppers and serving with a scattering of toasted pine nuts for added crunch. Alongside you’ll make tzatziki – a classic Greek mezze dip of yoghurt, lemon, and cucumber.
