Three cup chicken, or san bei ji (三杯鸡), is considered an iconic Taiwanese speciality yet it is believed to have originated in the Jiangxi province of China, over 700 years ago. Now onto the burning question, why is it called Three Cup Chicken? ‘Three cup’ refers to the equal usage of three key condiments: sesame oil, soy sauce and Shaoxing wine, used to create an aromatic, sticky-sweet glaze that absorbs right into the succulent chicken. An authentic Three Cup Chicken calls for garlic, ginger and basil leaves which amplifies the dish, and lends an exotic aroma and spicy nuance.
