Kimchi is so crucial to Korean culture & identity that Korean scientists spent millions of dollars and several years developing a kimchi that could be safely eaten on the International Space Station, ensuring Korea’s first astronaut wouldn’t go without her beloved spicy fermented vegetable. We won’t claim that our tangy, piquant cabbage kimchi is fit for zero gravity, but it does provide a kick of flavour to this traditional Korean buchimgae (pancake). We’ve combined our favourite kimchi and hobak (courgette) pancake recipes for a refreshing twist on this humble yet hugely satisfying favourite.
