Recipe Description:

In Palestinian cuisine, ‘seasonal’ and ‘local’ go without saying. This chicken recipe comes from the area around Jerusalem, where wild thyme grows on the surrounding hills, ready to be picked and blended into zahtar. Attention to detail is key— while we can’t promise we’ve done the same, some cooks not only blend their own foraged zahtar but swear by individually hand-rolling every ball of maftoul (giant couscous)! This simple citrus-zahtar seasoned chicken becomes brilliantly flavourful after roasting, with the tabbouleh-style maftoul salad soaking up its concentrated flavours.
