Recipe Description:

Originally a Lebanese variety of oregano, zahtar has become an umbrella term for various seasoning mixtures, consistently featuring sumac, sesame seeds, salt and dried herbs. These tangy, nutty and herby flavours coating the savoury grilled chicken are refreshingly contrasted by two mezze (side dishes): cooling cucumber tzatziki and tabbouleh, a Middle Eastern salad. Notice the intense flavours of the dried, grilled herbs in the marinade versus the abundant fresh parsley and mint of the tabbouleh: a typical Lebanese way of maximising on the huge variety of possibilities contained within similar ingredients.
